Mangalore Buns/Banana Poori
Sharing a new breakfast recipe that wowed everyone in my family. Simple and easy to make and a refreshing change from the routine breakfast we all have been used to.
Mangalore Buns are a specialty dish of Mangalore. It is slightly sweet, deeply fried and is made from bananas and flour. Served with coconut chutney, the Mangalore buns are one of the top most like delicacy from Karnataka coastline that has won many fans in other parts of the country also. Darshinis and a host of restaurants across the city dish out these delightful savouries.
Few vegetarian chefs from Udupi were the brains behind the delicacy. Story behind the origin of non baked “buns” is actually interesting. This was a result of making an attempt to dispose a lot of ripe bananas in a udupi hotel, which was added to flour and resulted in the Mangalore Buns. The makers loved it and soon it became popular in Udupi and Mangalore and made its way to the darshinis of Bengaluru.
The dough needs few hours of resting, so if you are planning to make them for breakfast prepare the dough in the night and keep. So next time when you have time in hand, and want to make something different, do try this recipe.
Ingredients:-
All purpose flour- 1 cup
Ripe Bananas- 2
Curd- 2 tsp
Sugar/Brown sugar- 4 tsp
Cumin seeds- 1 tsp
Fennel seeds- 1/2 tsp
Ghee- 2 tsp
Cardamon- 2 (Optional)
Ghee- 2 tsp
Baking soda- 1/2 tsp
Oil for deep frying
Salt to taste
Method:-
Mash bananas with help of a blender or hand to a smooth consistency, without any lumps.
In a mixing bowl, add flour, salt, soda, curd, ghee, cumin seeds and make a fine dough. Do not panic if the dough gets sticky, just dab some more ghee and kneed it well. Cover it with a cloth and let it rest for 4-6 hrs or overnight, if doing for breakfast.
Heat oil in a kadai to fry. Take small part of the dough and make a big chapathi and cut small pooris out of them, or just roll them as you would do for a poori. Whatever works for you. But remember they should be thicker than the regular pooris for them to puff up.
Voila! Home made mangalore buns are ready. I personally liked them as it is with hot cup of tea, authentically its served with coconut chutney. Once I also sprinkled cinnamon sugar on top, they tasted soooooo good. So try whatever accompaniment suits you.
