Palak Rice with Onion Raitha
Palak leaves 2 cups
Green chillies 3
Cumin seeds 1/2 tsp
Green cardamon 2
Chana dal 1/2 tsp (Optional)
Few coriander and mint leaves (Optional)
Salt to taste
Blanch palak leaves in hot water for 10 minutes, after they cool off make a fine paste of the leaves and keep aside.
Coarsely ground cumin seeds, cardamon, clove, garlic
Take a kadai, add oil the grounded masala, bay leaf, curry leaves, mint&coriander leaves, chana dal and fry them for a minute. Add onions green chillies and fry till the onions change into golden colour. Add the palak paste, salt and let it cook for few minutes. Turn off the flame and add cooked rice and mix well.
Garnish with some coriander and serve hot with onion raita and some papad 🙂
- You can add peanuts
- Grind chillies while making the palak paste
- Can add potatoes, carrots and peas to make it more healthier
